Fabes con Almejas

Asturian white beans with clams, a sophisticated maritime variation of fabada, combining the creaminess of fava beans with briny clams and white wine.

Ingredients

  • 300g fabes
  • 1kg clams
  • 100ml white wine
  • 1 onion
  • 4 garlic cloves
  • 1 bay leaf
  • pinch saffron
  • 50ml olive oil
  • parsley

Instructions

Beans

Soak overnight. Simmer with bay leaf until tender (1 hour). Reserve cooking liquid.

Clams

Scrub clams, soak in salted water 1 hour to purge sand.

Sofrito

Sauté onion and garlic in oil until soft. Add wine, reduce slightly.

Clam Opening

Add clams, cover, steam 5 minutes until open. Remove clams, reserve liquid.

Combination

Add beans to sofrito. Add strained clam liquid and enough bean broth to cover. Simmer 15 minutes.

Finishing

Return clams to warm through. Sprinkle with parsley. Serve immediately with crusty bread.
