Sweden's "Jansson's Temptation," a creamy potato and anchovy gratin, traditional at Christmas and smörgåsbord, despite the name containing no temptation but plenty of comfort.
Ingredients
- 1kg potatoes (waxy)
- 200g sprats (Swedish anchovies)
- 2 onions (sliced)
- 300ml heavy cream
- 50ml milk
- 2 tbsp breadcrumbs
- 2 tbsp butter
- salt
- pepper

Preparation
Peel potatoes, cut into matchsticks (or grate coarsely). Rinse, drain.

Layering
Butter baking dish. Layer potatoes, onions, and sprats (including their brine), ending with potatoes.

Liquid
Mix cream and milk, pour over until just visible at edge. Dot with butter, sprinkle breadcrumbs.

Baking
Bake at 400°F (200°C) for 1 hour until potatoes tender and top golden.

Resting
Let stand 10 minutes. The cream should be mostly absorbed. Serve with beet salad and ham.
