Dutch mashed potato combinations, typically with kale (boerenkool) or sauerkraut (zuurkool), topped with smoked sausage and gravy.
Ingredients
- 1kg potatoes
- 300g kale (chopped fine) or sauerkraut
- 200g rookworst (smoked sausage)
- 100ml milk
- 50g butter
- salt
- pepper
- nutmeg
- mustard

Cooking
Boil potatoes in salted water. If using kale, add to same pot for last 15 minutes. If using sauerkraut, heat separately.

Sausage
Add rookworst to pot for last 10 minutes to heat through.

Mashing
Drain potatoes (and kale). Return to pot. Add warm milk and butter. Mash roughly, leaving chunks.

Seasoning
Add salt, pepper, and nutmeg. Fold in sauerkraut if using.

Service
Make well in center, place sliced sausage there. Serve with mustard and jus (pan gravy).
