Czech sirloin in cream sauce, the national dish, featuring beef braised with root vegetables, then puréed into sweet-sour cream sauce served with bread dumplings and cranberries.
Ingredients
- 1kg beef sirloin
- 100g bacon
- 2 carrots
- 1 parsley root
- 1 celery root
- 1 onion
- 4 allspice berries
- 2 bay leaves
- 500ml beef stock
- 200ml heavy cream
- 2 tbsp flour
- 2 tbsp vinegar
- 1 tbsp sugar
- lemon peel
- salt

Larding
Lard beef with bacon strips (insert with larding needle) or wrap with bacon.

Searing
Brown meat on all sides in pot. Remove.

Vegetables
Add diced root vegetables and onion. Sauté until golden.

Braising
Return meat, add stock to cover, allspice, bay, lemon peel. Cover, simmer 1.5 hours.

The Sauce
Remove meat. Blend vegetables and cooking liquid until smooth. Return to pot.

Finishing
Mix cream with flour, temper into sauce. Add vinegar and sugar. Simmer 10 minutes. Slice meat, serve drowned in sauce with knedlíky and cranberries.
